Ingredients

    4 medium bell peppers
    2 cloves garlic, chopped
    1 package Success Brown rice, cooked
    1 can 98% fat free cream of mushroom soup
    2 large portebella mushrooms, diced
    salt and pepper to taste

Directions

Sautee onion, mushroom and garlic until tender. Stir in rice to mushroom mixture. Cut thin slice off of top of pepper and take out seeds. Parboil for about 5 minutes. Put peppers in a casserole dish and stuff with rice/mushroom mixture. Dilute can of soup with about a half can of water and heat stirring until smooth. Pour over and around peppers, cover and bake until peppers are tender...About 20 to 30 min. YUM!
