    Granulated Sugar, .75 cup
    *Margarine, soft, 25 ml
    Butter, unsalted, 25ml
    Egg, fresh, 1 medium
    *Lemon Rind, 2 tsp
    Milk, 1%, .5 cup
    *Flour, white, 1.25 cup
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    Yogurt, plain, low fat, .5 cup (8 fl oz)
    Blueberries, fresh, 1 cup


Preheat oven to 350. In a large bowl beat together sugar, butter, margarine, lemon rind, and lemon juice mixing well. Add milk, mixing well. Combine flour, baking powder and baking soda; add to bowl alternating with yogurt, mixing just until incorporated. pour into muffin tin or loaf pan.

    This sounds like something I'd like to have. Going to try it as soon as I get the blueberries but may have to forgo the lemon rind. - 3/14/10
