    3 cups uncooked noodles
    6 cups frozen chopped spinach, thawed
    1 1/4 cup plain bread crumbs
    1 cup vegetable broth
    2 T olive oil
    1/4 cup chopped fresh dill
    2 T lemon juice
    salt and pepper


Preheat oven to 350degrees. cook noodles according to package instructions. Place defrosted spinach in a colander in sink and squeeze out as much water as possible. add to mixing bowl. Add bread crumbs to mixing bowl. In food processor, puree tofu, broth and oil until smooth. add to mixing bowl. When pasta is done, run under cold water and add to mixing bowl. Add remaining ingredients and mix well. Coat a 9X13 with cooking spray. Spread mixture into pan. bake for 30 minutes. Rest for 10 minutes before serving. serves 8.
