    1 lage head broccoli, cut into 2-inch pieces
    2 T olive oil
    1/2 lb. ground turkey, lean
    1 large onion, chopped
    3 cloves garlic, chopped
    1/2 tp nutmeg
    One 32-ounce low sodium chicken stock
    One can tomatoes, no salt
    One can white beans, rinsed


Bring water to boil in medium pot. Add broccoli and boil for 3 minutes. Drain and cool.
In soup pot, heat olive oil and add turkey, cooking until browned, about 3 or 4 minutes. Stir in the onion and garlic and cook until softened, about 5 minutes. season with nutmeg and black pepper to taste.
Add chicken stock, tomatoes, and 2 cups water; cover and bring to a boil. stir in the white beans and broccoli and return to a boil.
(1 1/2 cups small pasta can be added as well, but is not included in this recipe).
