    For the pesto:

    1.5c fresh cilantro
    0.5 c fresh mint
    0.5 cup Parmesan cheese
    3 tbsp toasted pecan halves
    1 tsp kosher salt
    2 garlic cloves
    1 serrano chile, seeded and sliced
    2 tbsp extra virgin olive oil
    2 tsp white balsamic vinegar
    .25 tsp freshly ground black pepper

    For the chicken and pasta:

    .75 lb boneless skinless chicken breast
    2 tbsp extra virgin olive oil
    salt and pepper to taste
    6 c hot cooked whole wheat penne pasta
    2 c cherry tomatoes, halved


Yield: 6 servings (sesrving size: 1 cup)

Place cilantro and next six ingredients (through chile) in a food processor; process until well blended. With processor on, slowly pour 2 tbsp olive oil through chute; process until well blended. Places pesto in large bowl; stir in vinegar and black pepper.

Heat a grill pan over medium-high heat. Coat chicken with 2 tbsp olive oil. Season with salt and pepper. Add chicken to pan; cook five minutes on each side or until done. Cut into bite sized pieces. Add chicken, pasta, and tomatoes to pesto; toss to combine.
