Number of Servings: 8


    White Rice, long grain, 1.5 cups raw
    Butter, 1 tbsp
    Olive Oil, 1 tbsp
    Baby Carrots, raw, 5 medium
    Onions, raw, 1 large
    Green Peppers (bell peppers), 1 cup, chopped
    Chicken stock, home-prepared, 3 cups
    Parmesan Cheese, grated, .5 cup
    White Wine


Chop each veg in mini chopper
Place in Pan, oil and butter over low heat
Add the veg's and Saute the veg's just till they shimmer do not brown
Add the rice stir to coat with veg's
Add the stock and cover over low heat
When the rice is cooked (there will be holes in top) shut the heat and the wine add the cheese and stir. Let stay on the stove for 5 minutes. Salt and pepper to taste. (shouldn't need too much salt as the chicken stock is salty)
Makes 6 servings 1 cup each.
