    48 Nilla Wafers
    3/4 cup Boiling Water
    1 pkg 3oz Jello Brand Lemon Jello
    1 cup ice cubes
    1pkg Neufchatel Cream Cheese, softened
    1/4 cup sugar
    2 tsp Lemon Zest
    2 cups Lite Cool Whip, thawed
    1/3 cup Smuckers Raspberry Seedless Jam


Take a 8 inch square pan
Place plastic wrap in pan and place 16 cookies around the side.
In a meduim size bowl place jello and boiling water. Stir til disolved, and then add ice til disolved.
In a large bowl add Cheese, sugar and lemon, blend until blended. Then slowly add in the jello.
Whisk in 2 cups lite cool whip.
Pour half of the mixture in the pan. place 16 Nilla wafers on top.
Melt the Raspberry jam and brush over the Nilla wafers/
Pour the remaining mixture over the wafers, and add the remaining wafers.
Refrigerate 4 hours or until firm. Invert dessert onto plate and top with optional fruit and cool whip.

  • This is REALLY good, even better than good. Less fattening version, use Fat free CoolWhip, Fat free cream cheese, splenda, and Smuckers Simply Fruit, and only 16 Vanilla Wafers; cut it in 16 pieces and lowered the calories to 108 per serving. And STILL Very Good!! - 3/15/10
