    6 medium potatoes, peeled & chopped
    2 1/2 cups water
    1/2 cup chopped onion
    2 tsp chicken bouillon granules
    1/4 tsp black pepper
    3/4 cup reduced fat cheddar cheese
    3/4 cup american cheese
    1 1/2 cup fat free evaporated milk


Combine potatoes, water, onion, chicken granules and pepper in a slow cooker coated with cooking spray. Cover; cook on LOW for 8 to 9 hours or HIGH for 4 to 4 1/2 hours.

Stir in cheeses and evaporated milk in slow cooker. Cover; cook on LOW for 1 hour more or HIGH for 30 minutes more.

  • Awesome soup! I was very skeptical when I came home and looked at it before adding milk & cheese, but turned out so great! Had to add a little salt/more pepper, but very satisfying, will def. make again. Forgot to mash down the potato cubes, but still good enough to go in the 'keep' pile! - 8/17/10
