Ingredients

    1 can coconut milk
    1 cup fresh peas
    approx 2 cups diced eggplant
    1/2 pack Spicy Lemon Grass Flavored Fried Tofu (from Thanh Son Tofu), cut into bite-sized pieces
    3 lime leaves
    thai chili sauce to taste

Directions

Simmer all in the coconut milk until the peas are tender and the eggplant is cooked.

Add chili sauce to taste.
