Number of Servings: 12


    2 cups dried lentils
    1 cup raw white (or yellow) onion, chopped
    2 cups diced carrot
    1 tablespoon olive oil
    8 cups hot water
    3 cups diced red potatoes
    Knorr chicken bouillon, 2 large cubes
    1 tablespoon, ground black pepper (or to taste)
    chopped cilantro


Rinse and drain the lentils. In a large Dutch oven or soup pot, saute onions and carrots in the olive oil, stirring continuously. Just before onions turn translucent and carrots are softening some, add lentils to the pot and 8 cups hot water. Bring to a boil. Reduce heat to simmer; add bouillon and ground black pepper. After simmering for about 30 minutes, add the diced red potatoes. Simmer for about another 15 minutes, until potatoes and lentils are tender. Remove from heat. Stir in chopped cilantro.

Makes about 12 one-cup servings. Good with crusty cornbread or crackers on the side.
