    2 large eggs, beaten
    1/2 Cup Fat-Free Mayo
    1/2 Cup Skim Milk
    2T Flour (Nutrition info based on All-Purpose White Flour)
    1.5 Cups Reduced Fat Cheddar Cheese
    Salt & Pepper to taste
    1/2 Cup halved & sliced Zucchini
    3/4 Cup Chopped Asparagus
    1 Cup Sliced Green Pepper
    1 Cup Sliced Red, Orange or Yellow Pepper
    1 Cup Sliced Sweet Onion


Mix eggs, mayo, milk, flour and salt & pepper until well blended. Add 1 Cup cheese, set aside remaining 1/2 Cup. Add veggies. Pour into greased (I spray with olive oil) pie plate or 8x8 baking dish. Sprinkle remaining cheese on top. Bake at 350 for 1 hour. Enjoy!
