Introduction

Number of Servings: 4

Ingredients

    1 tbsp lemon juice
    1 tbsp dry mustard
    1/4 tsp salt
    1 tbsp white wine or apple cider vinegar
    1 tbsp minced shallot
    1/8 cup olive oil
    3 cups water
    1 cups pearl or hulled barley
    1 tbsp dried oregano
    2 tbsp pitted and chopped olives (kalamata or spanish)
    2 tbsp drained capers
    1/4 cup walnuts

Directions

Bring water to a boil and add barley. Reduce heat and allow barley to simmer for 45 - 60 minutes. All water should be gone and barley should have a firm, chewy texture. Remove from heat and allow to cool a bit.

While Barley is cooking, combine olive oil, mustard, lemon juice, vinegar and salt until you have a well blended dressing.

Pour dressing over barley and mix in walnuts, and oregano, mixing until everything is evenly distributed.

Serve then, or chill and eat any time. Green onions can be added as a savory garnish. Enjoy!
