Ingredients

    2 T peanut oil
    1 lg onion chopped
    1 c dried red lentils, washed
    2 T minced fresh ginger
    1 T minced garlic
    1T mustard seeds
    2 cloves
    1 t cracked black pepper
    chopped fresh cilantro leaves for garnish

Directions

Put oil in skillet over medium high heat; when hot, add onion and cook until soft, about 10 mins; set aside.
Meanwhile, combine all remaining ingredients except salt. Add water to cover by about 1 inch and bring to boil. Adjust heat so mixture bubbles gently, and cook, stirring occasionally and adding water if necessary, until lentils are tender, 15-20 mins. Sprinkle with sale and more pepper and keep cooking to desired tenderness. Lentils should be saucy but not soupy.
Remove cloves from pan and add reserved sauteed onion. Stir in optional 2 T butter. Taste and adjust seasoning, then garnish with cilantro and serve
