    1/2 sheet flaky puff pastry
    1 tsp olive oil
    1/4 onion
    1/2 clove garlic
    50g chicken breast (no skin)
    1 large broccoli spear
    1/4 cup peas
    generous dollop of bechamel sauce
    salt and pepper


Get your pastry ready (I'm using frozen) so in my case get out of freezer!

Heat up pan with olive oil and brown onions and garlic, add chicken cut into very small pieces. Season with salt and pepper.

Put broccoli and frozen peas in a pot on the stove to soften and steam.

While stirring chicken mixture make bechamel sauce in another pot. All three pans should finish around the same time.

Chop broccoli roughly and add to chicken mixture.
Add bechamel sauce to pan and stir together (off heat).

Leave to cool.

Cut sheet of pastry in half on the diagonal with a sharp knife.

Put a small amount of mixture into one of the triangles fold over to make a smaller triangle (doesn't have to be sealed or anything) and put into hot oven 220C for 15 minutes.


This recipe is just for one parcel but I usually make 4 at a time and freeze them for easy (special treat) lunches:)
