Introduction

I really am clueless as to what to do with pork chops without them coming out flavorless or tough..so, adapting this from a chicken recipe I found from a WW lifer. I really am clueless as to what to do with pork chops without them coming out flavorless or tough..so, adapting this from a chicken recipe I found from a WW lifer.
Number of Servings: 3

Ingredients

    Boneless pork loin chops, 4oz each, 1/2-3/4 in. thick
    1/2 cup panko bread crumbs
    2 tsp Grey Poupon Dijon mustard
    1/2 tsp sea salt
    1 Tbsp light mayo
    1/4 tsp garlic powder
    1/4 tsp paprika
    1/4 tsp fresh black pepper
    1/4 tsp cayenne pepper
    oil spray

Directions

Preheat oven to 400.Line a baking sheet with foil and set a rack above. Spray rack with oil.

Mix panko with salt, paprika, garlic powder, black pepper and cayenne pepper. Place in a shallow dish or ziplock bag.

Combine mayonnaise and Dijon mustard.

Using a cooking brush, brush onto pork then coat chicken with panko mixture. Place pork on wire rack and spray with oil.

Bake 25-30 minutes.
