Number of Servings: 7


    2 tbsp. olive oil
    200 g onions, chopped
    1 or 2 cloves of garlic, minced
    100 g carrots, sliced (about 2 medium)
    150 g zucchini, diced (about 1 medium)
    50 g red bell pepper, chopped (1/2 large)
    1 small can tomatoes with juice
    2 tbsp tomato paste
    80 g lentils
    thyme, basil, oregano or other seasonings
    salt and pepper to taste


Heat the olive oil, add the chopped onions and garlic and cook till clear. Add the chopped vegetables and cook a few minutes before adding the tomato juice, tomato paste, salt, pepper, and herbs. Add water to make 7 cups of soup (2-3 cups). Add the lentils and bring the soup to a boil. Turn down and allow to simmer until the lentils are soft - depending on what kind of lentils are used, 30-45 minutes.
