    8 large potatoes, skinned, chopped
    3 medium onions, chopped
    1 # bacon, chopped into 1" pieces
    5 jumbo eggs
    2 1/4 cup white flour
    4 oz cream cheese
    4 oz sour cream
    8 cups milk
    2 tsp salt
    1 tsp black pepper
    1/2 tsp garlic powder


Makes six quarts.

Put potatoes in large soup pot, cover with water; water should be 1" above the potatoes. Heat on high to boiling, stirring often. Meanwhile, mix eggs and add flour to eggs. Drop this mixture by 1/2 tsps into boiling potatoes. (this is easier with wet fingers). Reduce heat to medium low. Cook bacon until soft, then add onions and continue cooking until onions are carmelized; drain rendered fat and add bacon and onions to potatoe pot. Add seasonings, cream cheese, sour cream, and milk.

This large pot of soup will feed half an army, and has always been a favorite for my children. Never any left-overs.
