    1 magret duck breast
    1/2 t cornstarch
    1 t sugar
    1 t rice vinegar
    2 t soy gauce
    1 t oyster sauce
    1 T sesame oil
    1 1/2 T peanut oil
    2 cloves garlic, peeled and slivred
    1 1" piece ginger, peeled and slivered
    1 1/2 t peppercorns
    6 ox shiitake mushrooms, stemmed and sliced
    6 oz broccolini, in 1 " pieces
    brown rice


Peel skin and fat from duck. Slice across grain 1/2" thick. Mix cornstarch, half sugar, vinegar and half soy in medium bowl. Add duck and turn to coat. Set aside 15 mins. Mix remaining sugar and soy with oyster sauce and sesame oil.
Place skillet on high, add peanut oil, then duck. Stir fry one minute Transfer to dish. Reduce heat to medium. Add garlic, ginger and peppercorns and stir. Add muschrooms, sprinkle lightlly with salt and stir fy until wilted and shiny. Add broccolini and stir fry 2-3 mins.
Increase heat and retun duck to pan. Stir fry another minute until duck starts to firm. Add oyster sauce mixture and stir. Serve with brown rice.
