Introduction

My mother in law's famous asparagus casserole. You have to like canned asparagus with this one. It's simple but very good. My family gobbles this up. Nana ROCKS! :) My mother in law's famous asparagus casserole. You have to like canned asparagus with this one. It's simple but very good. My family gobbles this up. Nana ROCKS! :)

Ingredients

2 cans asparagus spears (I use Del Monte)
2 Tbs butter (the real stuff is best here)
    3 Tbs all purpose flour
    1 cup 2% milk
    1 cup shredded cheddar cheese
    3/4 cup Velveeta Cheese diced
Franks hot sauce to taste (3 dashes for me)
4 slices whole wheat bread diced (I use weight watchers wheat)
3 Tbs butter or margarine (I use Fleishmans OO spread)

Directions

Drain asparagus and put in greased 8x8 casserole dish. In medium saucepan melt 2 tablespoons of butter, add 2 heaping tablespoons of flour. Blend flour and butter over very low heat using a wisk. Add milk stirring constantly and keep heat low.

Add cheddar cheese, velveeta and hot sauce. Stir well and pour over asparagus in prepared pan.

Melt the 3Tbs margerine in microwave in a medium bowl. Add the diced bread, stir and then sprinkle the bread over cheese mixture in the pan.

Bake at 350 degrees or until bread is toasted

Allow to cool for 10 minutes before serving.
