A delicious fish soup. A delicious fish soup.

    500 g frozen cod fillets
    1 tbsp olive oil
    2 cups carrots, cut in small chunks
    2 cups mushrooms, sliced
    2 medium onions
    1 tsp garlic powder
    1/4 tsp thyme
    Dash of pepper
    4 cups chicken or vegetable broth
    2 cups water
    2 bay leaves
    2 cups cut green beans


Partially thaw fish fillets (about 30 minutes) then cut into 1 inch cubes.
Saute carrots, mushrooms, onions and garlic powder in olive oil until onion is translucent.
Add seasonings.
Pour in chicken or vegetable broth and water.
Add bay leaves and green beans.
Stir, bring to a boil and simmer covered for about 10 to 15 minutes, or until beans are tender-crisp.
Add fish and simmer 5 minutes or until fish is opaque and flakes easily.

Makes 6 servings (2 cups each).
