Ingredients

2 T. olive oil
2 c. roasted chicken thighs and legs, cut into 1-inch cubes
2 onions, cut into chunks
2 T. soy sauce
3/4 lb fresh asparagus, cut into 1-inch lengths
1/3 cup fresh mushrooms, sliced
1/2 cup tomato, chopped
1 t. cornstarch
1/4 cup white wine or vinegar
Directions
Heat oil in a wok or skillet. Combine chicken, onions, and soy sauce in skillet. Cook on high heat for 1-2 minutes. Add asparagus, and mushrooms. Cook for 5-6 minutes more. Add tomato. Dissolve cornstarch in white wine or vinegar and blend into meat mixture, stirring constantly for 2-3 minutes until sauce thickens and vegetables are tender. Yields 8.9 grams of EEC, 20.1 grams of protein
