    Olive Oil, 1 tbsp
    Chicken Breast, no skin, 1 pound - cut into 1" or less cubes
    fresh onion, .1/2 medium
    Garlic, 3 cloves, grated
    Salt, 1 Tsp
    Cumin (ground), 2 TBSP
    Pepper, red or cayenne, 1/8 Tsp
    Beans, great northern, 2 cans, drained & rinsed
    Beans, pinto, 1 can, drained & rinsed
    Chicken Broth, 14.4 oz can
    Aldi Frozen Corn, 1 C
    Green Chili Peppers, canned, 4 oz can
    Cheese, Best Choice Colby Jack Cheese, 9 TBSP
    Lime Juice, 1/2 Lime


-Heat Oil in heavy saucepan over medium heat.
-Add chicken and onion. Cook until chicken is ot longer pink (approx 5-7 min).
-Stir in garlic and spices. Continue to cook for 1-2 minutes.
-Add beans and chicken broth. Stir and simmer for 25 minutes.
-Add corn and green chili. Simmer for 5 more minutes.
-Remove from heat and squeeze lime into chili.
-Serve with 1 TBSP of cheese per cup of soup.
