    1 T olive oil
    1 1/2 C turkey sausage
    1 red bell pepper
    1 C chopped celery
    1 can tomatoes (or 2 C fresh)
    1/2 C parsley
    1 t basil
    1 t oregano
    1 bay leaf
    1 C stock
    2 t cornstarch
    cayenne pepper to taste
    2 C brown rice, cooked


Coat sauce pan with olive oil; dice turkey sausage and add to pan. Add all remaining ingredients except rice. Cook over medium heat until peppers are cooked and sauce is dense. Add additonal cayenne pepper to taste as needed.

Cover rice with sauce and serve.
