Introduction

Delicious, vegan patties, full of protein and fiber! Delicious, vegan patties, full of protein and fiber!

Ingredients

    2 c. cooked lentils
    1/2 c. chopped walnuts
    1/4 c. plain dry breadcrumbs
    1 small onion
    1/2 tsp. salt
    some freshly ground pepper
    1 1/2 tsp. egg replacer

Directions

Dice the onion and cook it in a small amount of water, covered, until soft. Mix the Egg Replacer with 2 tbsp. hot water. Mash the lentils and add the rest of the ingredients. Form into four patties and cook on a hot cast iron pan that has been sprayed with cooking spray. Spray the tops of the patties before flipping them over to brown on the other side. These are delicious, though dry. So, I serve them with a vegetarian packaged gravy that has 20 calories per tablespoon.
