Number of Servings: 8


    3 cups diced honeydew melon
    3 cups diced cantaloupe
    2 tablespoons thinly sliced mint
    1 teaspoon lemon juice
    1/4 teaspoon freshly ground black pepper
    2 ounces prosciutto, cut into thin slices
    2 ounces Parmesan cheese, shaved


Combine all ingredients and stir gently to combine. Serves 8.
