Ingredients

    2 cups wild rice
    2 cups water
    1 tsp salt, divided
    4 small Portabella mushrooms
    1 clove garlic, chp.
    1 Tbs Parsley
    1 Tbs. Olive oil
    1 cup chopped cooked chicken breast
    20 pecans, roughly chopped


Directions

Place water 1/2 tsp salt and dried parsley in medium pot over high flame. Bring to boil and add rice. Lower heat to simmer and cover. Wash portabellas well and drizzle olive oil, remaining salt and chopped garlic. Grill for 8-10 minutes.
Once rice is ready, toss with cooked chicken and pecans, then stuff portabellas with rice mixture.

Can add dried cranberries for additional flavor.
