    3 oz shrimp (10-12 large)
    2 corn tortillas
    1 garlic clove
    1 tsp olive oil
    2 tsp Pampered chef Chipolte Rub (or to taste
    1 TBSP low fat sour cream
    2 TBSP salsa
    1/4 c black beans
    1/2 c chopped lettuce
    1 TBSP feta cheese


Mince garlic and saute with olive oil for a few minutes. Coat shrimp with 1 tsp of chipolte rub and add to garlic. Add juice of 1/2 lemon. Continue to cook for a few minutes.

Combine remaining chipolte rub and sour cream-stir well.
Combine black beans and salsa-heat.

Heat corn tortillas in microwave (or steam). Add shrimp, beans, lettuce, feta cheese and sour cream mixture.
