Ingredients

    1 package of firm tofu, diced
    8 cups chicken broth
    1 bunch scallion (about 7) cleaned and chopped
    1 medium onion, chopped
    3 nice size portobello mushrooms cleaned and chopped
    1/2 cup (about) or to taste, miso paste
    Salt and pepper to taste

Directions

Makes 10 servings

Saute onions in a large skillet over medium high heat for about 5 minutes. Add the mushrooms and continue to saute for another 5 minutes. Add 1/2 cup of chicken broth and simmer till almost gone.

Add remaining broth to a stockpot and reserving 1 cup.
Heat on medium-low heat. Take reserved liquid and whisk with miso. Add the liquid to the stock pot as well as the onions, mushrooms and tofu. Continue to cook for about 30 minutes and enjoy!
