    2 medium eggs
    1 tbsp ground cumin seed
    1/4 tsp cayenne
    1 tsp Turmeric
    1 tsp curry powder
    1 tsp Salt
    1 tbsp Olive Oil
    4 cloves garlic minced
    1 cup chopped onions
    2 cups frozen chopped Spinach (thawed)
    1 cup Tomato Sauce
    3 cups Water
    1 cup dry quinoa
    6 tbsp chopped fresh Cilantro
    3 cups cooked dahl (lentils)


Makes 8 servings

Saute onions and garlic in olive oil until tender. Add dry spices and heat through. Add water, salt, and tomato sauce and heat to combine.

In a large bowl, combine dry quinoa, lentils, spinach and cilantro. Pour Tomato, onion, spice mixture over the dahl mixture. Beat the two eggs and mix thoroughly through the mixture.

Grease a 9x13 glass baking dish. Pour mixture into baking dish and cover with foil. Bake at 350 degrees for 60 minutes or until all liquid is absorbed.

Serve with raita if desired.
