This is super-easy and feed myself and my husband for days!! This is super-easy and feed myself and my husband for days!!
Number of Servings: 8

Ingredients

    2 Cans of Black beans, drained
    2 cans of Ro-Tel (not drained)
    1 Can of Mexicorn, drained
    1 Can of Sweet whole kernel corn, drained
    1 tbsp of cumin

Directions

Mix everything together in your crock pot, cook all day on low, stirring occasionally. You will know it's done when the chicken starts to 'shred'. I serve it as a stew with a dollop of sour cream on top. Some others like to spoon it on a tortilla.
