Number of Servings: 24


    2 c. whole wheat flour
    2 tsp.baking soda
    1/2 tsp salt
    2 tsp. ground cinnamon
    1 c. splenda for baking
    2 c. grated carrots
    1 large apple, peeled, cored, grated
    1/2 c. raisins (or other dried fruit)
    1/2 c. slivered almonds
    1/2 c. flaked coconut
    3 egg whites
    2/3 c. olive (or vegetable) oil
    2 tsp. vanilla


Combine first 5 items. Stir in carrott, apple, raisins,almonds, and coconut. Make a well in the center of mixture and add the wet ingredients.Mix to combine. Spoon into muffin pan sprayed w/non-stick spray. Fill miffin cups 2/3 full.Bake at 350 for 20 min.Makes 2 doz.
