Ingredients

1 Avocado
Lime Juice, 2 Tbsp
1 Grapefruit
Green Onions, thinly sliced, 0.5 cup
Mixed Salad Greens, 10-12 oz, about 2 quarts, torn
Apple Cider Vinegar, 2 Tbsp
Olive Oil, 1 Tbsp
Water, tap, 1 Tbsp
Sugar or equivalent artificial sweetener, 2 tsp
Ground Cumin, 1/4 tsp
Pepper, black, 1/8 tsp
Salt, 1/8 tsp (optional)
Directions
Peel and slice the avocado. Pour lime juice over avocado to prevent browning.
Section grapefruit and cut into bite-size pieces. In a large salad bowl, mix grapefruit, green onion and salad greens.
Drain avocado, reserving lime juice. Mix reserved lime juice with dressing ingredients.
Add avocado to the salad. Pour dressing over salad and toss.
Makes 10 cups
