Ingredients

    2 Small sweet potatoes (peeled, cut into small wedges)
    1 Onion, cut in to wedges
    8 spears of asparagus
    6 sprigs fresh rosemary
    1 Tbsp olive oil
    Kosher salt and pepper
    2 chicken breasts, cut in half

Directions

4 servings

Heat oven to 400 degrees. In a large roasting pan, toss the potatoes, onion, asparagus, rosemary, oil, 1/2 tsp sald, 1/4 tsp pepper.

Season the chicken with salt and pepper to taste. Nestle in among the potatoes and vegetables.

Roast until chicken is cooked the potatoes are tender. Approx. 30 min.
