I just made this tonight. It is based on another sparkpeople recipe that I found that used chicken. Since I'm living in Europe it was hard for me to follow exactly, so I made due and it came out great.

I figured that I would post it because I am assuming that many people have post-thanksgiving turkey that they will be trying to do creative things with for the next couple of weeks, so this is a healthy, delicious, high-protein option. Enjoy!Submitted by: GUITARGAZM

Chicken salad w/ grapes and nuts

Bake whole skinless chicken breasts until internal temperature reaches 180 degrees. Cool then chop coarsely. Finely chop celery. Slice grapes in half. Toast walnuts for about 6 minutes at 375 degrees, Cool the nuts. Combine all ingredients with the mayo and mustard. Add salt to taste. Yields 4 cups, or 8 1/2 cup servingsSubmitted by: SUSANC63145
