Low Fat Sweet Potato Latkes

Latkes are often served with applesauce or sour cream, which would be tasty with this. These latkes are also yummy with cream cheese or blue cheese, and topped with pomegranate seeds. This recipe replaces the oil used for frying with non-stick cooking spray.

To make the latkes vegan, substitute the eggs with applesauce and don't include the white sugar (as applesauce is naturally sweet) or Ener-G® Egg Replacer. Use coconut or soy milk instead of cows’ milk.Submitted by: PHIELIX

Quinoa Latkes

These little pancakes are a great way to use leftover quinoa. They are full of fiber and protein and are really delicious with breakfast or dinner. They are best fresh, but do reheat well enough in a toaster oven.Submitted by: SEEKINGSAMADHI

This is my grandmother's recipe copied from the card she gave it to me on. We had these every year for Chanukah and almost half never made it to the table. I am working out how to make then healthier yet still remain traditional. For now this is an indulgent holiday treat.Submitted by: MLHORAN10

Potato Latkes

To keep it healthy, you probably ought to figure one medium potato per person. However, you may crave more. Just a warning. I use red potatoes and leave the skin on. More fiber and potassium.

Cheese Latkes (ricotta pancakes)

Simple and easy, this recipe is high in protein and fits in with my diabetic/no refined white diet. The cholesterol can be cut by using an egg substitute. I use a fruit only jam for the topping. I make the whole recipe and use the leftovers for breakfast the next day.Submitted by: AMACHERIA

Soy Latkes/Hot Cakes

Great little snack, just the right taste of sugar and packed with a good bit of healthy soy protein.

I say latke because the granules reminded me of such...What i have here in Europe is called "soja granulat", soy granules? I assumed soy flour is similar enough when doing the nutrition info.Submitted by: KTIN77
