Cream of mushroom squash leaf soup

Paleo primal soup. Great way to get more from your summer garden. I use any squash leaves for the soup. 1 cup chopped is a serving. Running your knife across the back of the leaves breaks down the spines but is not necessary. When I am feeling lazy I through everything in whole except the onion boil 10 minutes longer and blend. Thai Spiced Pumpkin Soup (Heidi Swanson)

Another Heidi Swanson recipe from this big fan. It's really really easy (once the squash cutting is done) and the flavours are surprisingly complex. I used Heidi's original recipe for calorie calculations but you can lighten it up by using light coconut milk or just a bit less (I do this anyway, because I find the coconut flavour too strong otherwise) and skipping the butter.
