This recipe works great with any type of bean. Beans can be soaked overnight, the water drained and changed and the beans will last for approximately 10 days in the refrigerator. This is a low carb waffle recipe that uses pork rinds instead of flour (and amazingly doesn't taste a bit like pork rinds). I found it on forum.lowcarber.org. Use this delicious recipe to make healthy and nutritious pancakes, OR waffles. The recipe is very versatile and you can substitute soy milk for regular or even buttermilk and honey for water and sugar substitute or substitute the whole eggs for eggbeaters! It makes a wonderful, filling, and guilt free breakfast. Most pancakes and waffles have about 400 calories each, these only have 110! Combine wet ingredients (vanilla to taste)
Add buttermilk if necessary to thin
Cook on waffle iron until very brown.
Freeze extras and crisp in toaster oven.
