Rumbamel's Six Layer Bean Dip

I used to have seven or eight layers to this dip when I first started making it, but not everyone likes salsa and guacamole. So, it's now down to six, but still delicious. It's best made with Rosarita refried beans, but I can't seem to find them many places. This makes 9 servings and I put it in a 9 x 13 x 2 casserole dish.Submitted by: RUMBAMEL

I first got the recipe from a Suzanne Somers site and have altered it a bit. My 3 year old ate almost 6 oz all my himself tonight. This is great as a side dish with meatloaf! I would cut the serving sizes down, though. I calculated it for 4 dinner size portions and we eat it with a salad or small piece of meat like grilled chicken. But you could make six servings and eat it with meat loaf. The nutrition would then be 169.1 cal, 9.2 fat, 9.4 carbs, and 12.5 protein. Yum, either way!Submitted by: RUMBAMEL

Rumbamel's Frosted Cauliflower

My Mom has made this for years. My 3 year old son and 4 year old daughter gobbled it up.

THAI CHICKEN PIZZA

This pizza is delicious as an appetizer for guests.
It requires some prep time, but it is well worth it!!
For a veggie version, replace chicken with sauteed marinated tofu
You can manage the fat content down by making your own peanut sauce. I use A Taste of Thai Peanut Sauce mix (available in the Asian section of your supermarket) made with light Coconut Milk.
I prefer Boboli's whole wheat pizza shell, which increases the fiber in the recipe.
