WIC Cookbook Spanish Brown Rice

Ingredients
1 Tb olive oil1/2 red onion2 cloves garlic, minced1/2 green bell pepper1 large tomato, diced1 jalapeno, seeds removed, minced2 green onions, chopped1 ts chili powder1 ts salt3 cups cooked brown rice(I added some cumin, too)
Directions
In a skillet over medium-high heat, saute red onions, garlic, and green bell peppers in olive oil until tender. Add tomatoes, jalapeno, green onions, chili powder, and salt. Cook until softened. Stir in brown rice, Cook over high heat for a few minutes, allowing any liquid in the pan to evaporate.
