Pasta and Greens

Ingredients
Directions
2 cups of a whole grain pasta (cooked) or 4oz dry. I usually use a penne type pasta3 cups of sliced baby bella mushrooms2-4 tablespoons of olive oil4 cups of collard greens chopped 3 cups of kales chopped2 cups of diced fresh tomatoes4 cloves of garlic, crushed or chopped
Heat 2-3 tbsp of olive oil in a deep fry pan on the stove top.
Saute mushrooms in hot oil.
Boil large pot of water and cook the pasta as directed on the package (usually 8 mins) When there is 3 mins left in the cooking of the pasta throw in the chopped greens right with the pasta and cook 3 -5 minutes depending on how tender you like your greens.
Drain pasta and greens.
Add the garlic to the saute of mushrooms (if you have turned the flame off the mushrooms start it again) and cook for 1 minute. Add the pasta and greens right into the saute pan and mix and cook for another 1-2 minutes. Turn the fire off and add the fresh tomatoe dices.
Optional: Add the remaining olive oil. Mix well.
I don't know the serving size. I usually divide it into 4 and serve.
This is a very filling dish and you can add things like differnt herbs or grated cheese.
