Potato & Broccoli Soup

Ingredients
5.5 cups diced potatoes, 4 cups low sodium chicken broth, 4 cloves garlic, 2 cups fresh broccoli florets, 3 cups water, 1 tbsp i can't believe it's not butter (or margarine), 1 bunch green onions (cut up 2 inches past the white), salt, pepper
Directions
bring broth and water to a boil, dice potatoes toss in boiling water, saute butter, onion and garlic in separate pan, cook for 5 mins stirring occasionally, once potatoes are cooked, mash with masher as much as you like (i keep some of mine chunky), add onion, garlic and butter mixture, sour cream and broccoli. stir, simmer for 20 mins. salt and pepper to taste. makes 9 - 1 cup servings
