Wendy's Gazpacho Soup

Ingredients
Tomatoes - 2 - 14oz cans or FRESH in seasonVegetable Stock - 1.5 cupsWhole onionCelery - 4 stalksGarlic - 6 clovesSalt PepperCayenneBasil - fresh or driedCucumber - 1 wholeLemon slices for garnish
Directions
Add all ingredients to a pot, except cucumber. Cook in low heat until celery and onion are soft, about 45 min. Place in the refridgerator to cool, possibly overnight to totally chill and let the flavors develop. Place several cups in the blender with chunks of cucumber and puree. Serve chilled with a slice of lemon. Makes about 8 - 1 1/4 cup servings.
