Spanish Bean Soup

3 large potatoes peeled and diced into 1 inch cubes1 shallott (chopped)1 medium onion sweet (chopped)1 cup chopped ham1 can garbanzo beans (drained and rinsed)1 tbsp bacon grease1/2 cup cauliflower chopped/diced5 cups chicken broth
Cook onion in bacon grease for 5-8 minutes until clear, add shallotts cook additional 2-3 minutes until starting to brown. Add chicken broth and simmer 1-2 minutes, then add potatoes, garbanzo beans, cauliflower, and bay leaf with salt and pepper to taste. Cook 20-30 minutes until potatoes are soft, add ham, cook additional 5 minutes. You can stir in 2 cups fresh spinach or kale with hame for extra vegies.
