Masala Dhal

Ingredients
1 tbsp olive oil 1 cup dried red or yellow lentils 1/2 cup onion, chopped 1/2 cup no salt canned diced tomatoes2 tbsp Patak's curry paste1 tbsp Patak's tikka masala curry paste1/2 tsp cumin seeds1/2 tsp minced ginger1 tsp minced garlic1 cup water 1 tsp coriander
Directions
Heat the oil in a pan. Add the cumin seeds and fry until they start to crackle.

Add the chopped ginger and garlic and sautee for 1 minute.

Add the onion and sautee for a further 3 - 4 minutes until light golden brown.

Add the remaining ingredients, mix well and transfer to your Slow Cooker. Cook on High for 11/2 - 2 hours.

Serve with dash of coriander sprinkled on top
