Mushroom and Black Bean Soup

Ingredients
Drizzle of Olive Oil1 cup White Mushrooms, Chopped1/2 cup Red Onion, Chopped1 Green Onion, Chopped1 cup No Name Black Beans, drained and rinsed2 cup Campbells Vegetable Broth1 cup Water1 tbsp Minced Garlic4 tbsp Salsa1/3 cup Shredded Cheese3 tbsp Parmesan CheeseYour Favorite Spices, I use the following:-Cajun Spice-Paprika-Black pepper-Crushed chillies
Directions
Makes 3 1-cup Servings

Add a drizzle of olive oil to a saucepan over medium low heat.

Add in mushrooms, onions and 2/3 cup broth.

Simmer until onions become translucent

Add in garlic, beans, the remaining broth (1 1/3 cup), water, salsa and shredded cheese.

Add in your spices.

Cover and let simmer for about 20 minutes, or until the beans have softened a bit.

Blend using a hand blender until smooth.

Top with 1 tbsp of Parmesan Cheese in each bowl!
