Chicken Salad with Cilantro, Celery, and Lemon

1 Pound raw chicken with skin removed1/4 Cup cilantro chopped1/3 Cup celery diced7 TBSP Light Mayonnaise1 TSP Mustard1 TSP Lemon Juice1 TBSP Lemon ZestSalt and Pepper to Taste
Preheat the oven to 350 degrees. Put the raw chicken breast on a baking sheet lined with foil. Sprinkle salt and pepper over the chicken. Cook for 10 minutes. After 10 minutes, turn the chicken over and cook for 5 more minutes or until the breasts are cooked through. When done, remove from oven to cool. When the chicken has cooled, shred or cut up the chicken.
While chicken is cooling mix all the other ingredients in a bowl. Add the cooled, shredded chicken and mix thoroughly.
It is not very mayonnaise-y because I like to keep the calories down.
