Texas Caviar with roasted corn

1/2 onion, chopped1 green bell pepper, chopped1 bunch green onions, chopped2 jalapeno peppers, chopped1 tablespoon minced garlic1 pint cherry tomatoes, quartered1 (8 ounce) bottle zesty Italian dressing1 (15 ounce) can black beans, drained1 (15 ounce) can black-eyed peas, drained1/2 teaspoon ground coriander1 bunch chopped fresh cilantro1 roasted corn cob
Roast corn and trim off husk. In a large bowl, mix together corn, onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve. Serve with chips or crackers.
