Phyllo Dough, 12 sheet dough Butter, unsalted, .25 cup - meltedSpinach, frozen, 1 package (10 oz) Feta Cheese, 5 oz Egg, fresh, 4 large Wheat flour, white, all-purpose, unenriched, .6 Tbsp Scallions, raw, 4 medium (4-1/8" long) - sliced
Preheat over to 350 degrees
1. Defrost phyllo for about 5 hours in box or as instructed in package
2. cook spinach as directed in package. do not defrost. simply add about 1/4 cup of water to a pan and cook. remove from heat and place in colander. remove all excess water. Press out excess water with hands or paper towel.
3. In a bowl, mix spinach, eggs, flour, and feta cheese
4. coat a pan with cooking spray and cook scallions until fragrant. add to spinach mixture
5. Melt butter slightly. Do not let it brown
6. Place 1 sheet of phyllo on a clean suface. Brush and cover with butter. Top with a secons sheet and brush. Top with a thers sheet and brush (all other sheets should be kep wrapped in plastic and covered with a damp clothto keep from drying).
7. After all 3 sheets have been brushed, cut into 5 strips.
8. Add 1 tbsp of mixture on the corner of strip and form in triangle shape as you would a flag. Repeat.
9. Place all triangles in a cookie sheet coated with cooking spray. Brush all triangles with butter.
10. Cook for 20-25 minutes or until brown
