Lemon Chicken and Rice Soup

Ingredients
1lb chicken-no skin-boiled2 bags instant rice2 large cans cream of chicken soup (98% fat free) carrots-as many as you want or as littlelemon juicewatersalt/pepper
Directions
*Boil chicken breast, then cut into bite size or smaller pieces
*Cook rice according to package while chicken is cooking, chop carrots into small slices
*Add cream of chicken soup and carrots to rice, add water to make it as soupy as you like. Add chicken, salt/pepper and lemon juice to flavor.
*Cook over medium heat for 30 mins til flavors combine and carrots are tender.

Perfect for freezing extras for another meal!! Serve alone or add some crackers and hot sauce.
