14 oz cubed chicken3 tsp minced garlic2c Pacific tomato & roasted pepper soup1 packet Arora chicken tikka masala spice mix2 Tbsp + 1 tsp oil(The soup and spice mix can both be found at Whole Foods.)Rice:1/2c basmati rice (dry)1 tsp oilMacronutient breakdown:40% carbs, 30.1% protein, 29.9% fat
In a rice cooker, cook the basmati rice with oil.

Heat the larger amount of oil in the bottom of a pot for 1 minute. Add garlic and sautee until light brown. Add soup and cook about 1 minute, or until hot. Stir in spice mix and cook 2-3 minutes. Add cubed chicken, stir, cover, and cook for 8-10 minutes.

Notes to self: In a Genkikun rice cooker, 2c water makes 2.5c cooked rice out of 1/2c dry (1/2c cooked rice per serving).
